This week, our Lufa Farms order included organic Cortland apples from Verger Maia, organic Spartan apples from Verger Biologique Maniadakis, organic Honeycrisp apples from Pomibec, organic cranberries from Atoka and unsweetened apple sauce made with Jersey Mac apples by Catherine Cafiti. We already made a Sunday dinner out of the loot, with roasted salmon in spiced apple sauce on a bed of potatoes and apples and a fennel, apple and pear salad on the side.

Now, it’s time for brunch.

There is always room for dessert. These light and airy cranberry apple streusel muffins are tangy and zesty, redolent with bright lemon flavour and bursts of sweet-and-sour cranberries. Honeycrisp apples provide the sweetness, along with all-natural maple syrup or honey and an oat-and-brown-sugar topping. They are low in fat and processed sugar, and can feel downright virtuous for a dessert – or just right for breakfast.

Cranberry Apple Streusel Muffins

2 cups AP flour
1 tsp cinnamon
zest of 1 lemon
2 tsps baking powder
1/2 tsp baking soda
1/4 cup vegetable oil
1 egg
1/2 cup maple syrup or honey
1 cup Honeycrisp apples, chopped
For streusel topping (optional):
1/2 cup AP flour
1/2 cup oats
1/2 cup coconut oil or butter, melted
1/2 cup brown sugar

Chop apple.
Mix dry ingredients together.
In a separate bowl, whisk egg thoroughly until airy. Add oil, applesauce and maple syrup in a steady stream, continuing to whisk throughout.
Make a well in the middle of the dry mixture, and add wet mixture. Stir only until combined (do not over mix).
Add the apple and cranberries and fold them in gently.
Oil a muffin pan very thoroughly. Fill each muffin cavity to the top.
If using streussel topping, stir all the dry ingredients together. Add melted coconut oil or butter slowly, and stir to combine. Top each muffin with about a tbsp of streussel topping.
Bake at 400F for 20-25 mins, until the tops are golden and a toothpick comes out clean.
